When making a simple syrup, you want to be sure it comes up to a simmer but do not let it cook too hot too long. If this happens, it starts to turn into a caramel.

Straining the syrup will remove any pieces of fruit that has broken off and will give you a smooth syrup.

What is the taste of plum syrup?
