A sparkling cocktail is any cocktail that is bubbly. This is usually done with sparkling wine but can also be achieved with bubbly seltzers or sodas. For the most part they are meant to be a light refreshing drink.
Origins
I had an open bottle of sparkling wine but was a bit wined out so I decided to come up with cocktail. I’ve always enjoyed citrus flavors mixed with cherry. The first attempt was missing something and I realized bitters was what was missing. The cocktail came out amazing.

FAQ
You can add whatever bitters you like. The cherry just works well with the cherry juice.
Can I use another juice instead?
Cranberry juice works well with this cocktail. You can swap in most any juice as long as it tastes good with lemon. If you make a juice change I would also change in a different bitters.
You can use any sparkling wine you want but I prefer less heavy and more citrus forward for this cocktail.
The Olive Twist
The cherry is what dominates the Cherry Mimosa Cocktail with the bitters and lemon finessing it to a well rounded and bubbly drink. Another really good juice would be cranberry though I’d change in lime for lemon. Speaking of lime you can make this a nice limeade but putting some lime juice in as well. A chocolate bitters or even a chocolate rim would bring in a delicious cocoa flavor.
