We use our easy Plum Syrup in this recipe which brings the perfect plum flavor with some sweetness.

You can also use a Plum Juice, however it will not be quite as sweet. The drink also tends to look more garnet red than a pink purple.

Egg Whites in Cocktails

Egg whites are used in cocktails to bring a richness, smoothness, and some foamy texture to a drink.

It is not for everyone!

If you do not want to use a raw egg white, you can use the carton whites that have been pasteurized.

Another swap is using chickpea juice from its can.

Or you can just skip it altogether and it will still taste great, just with a slightly different texture.

Tips

A sour typically uses an ounce of lemon juice, but we found that this much overpowered the plum fruit flavor. We reduced the lemon to a half ounce instead.

This alcoholic drink can be made in advance but is best when shaken and still frothy. If made in advance, it is recommended to shake again before pouring or serving, or making it in smaller batches to keep the froth.

Ingredients
  

  • 2 ounces gin
  • 1 ounce plum simple syrup
  • ½ ounce lemon juice
  • 1 egg white

Instructions
 

  • Add the ingredients, without ice, to a cocktail shaker and shake. This will help break up the egg white and get a foamy texture.
  • Add a scoop of ice and shake again for at least 30 seconds.

Notes

While a normal sour calls for 1 ounce of lemon juice, we found it to be overpowering and chose to reduce it to 1/2 ounce.
Plum simple syrup can be swapped out for plum juice, however you will lose some sweetness. The color also changes to more of a garnet red.
